Bob’s Red Mill Low Carb Muffins.
- 2 Cups Low-Carb Baking Mix
- 2 Tbsp Canola Oil
- 2 Eggs
- 1 Cup Water
- 3 tsp Baking Powder
- 4 packets of your favorite low carb sweetener
- 1/2 tsp Vanilla
Heat oven to 350 degrees Fahrenheit. Lightly coat muffin tins with spray oil. In a mixing bowl, combine dry ingredients
(Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of dry ingredients and add the eggs, water, oil and vanilla. Mix with a fork or whisk until blended, approximately one minute. Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm with your favorite butter or cheese.
